Description

A hearty and flavorful turkey orzo dinner featuring ground turkey, tender orzo pasta, fresh vegetables, and aromatic herbs, perfect for a comforting weeknight meal.


Ingredients

1 tablespoon olive oil
1 pound ground turkey
1 medium yellow onion, diced
3 cloves garlic, minced
1 medium carrot, peeled and diced
1 medium celery stalk, diced
1 cup orzo pasta
3 cups low-sodium chicken broth
1 cup canned diced tomatoes, undrained
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups fresh spinach, chopped
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley


Instructions

Heat the olive oil in a large skillet or saucepan over medium heat.
Add the diced onion, carrot, and celery to the skillet and sauté for 5 minutes until the vegetables are softened.
Add the minced garlic and cook for 1 minute until fragrant.
Add the ground turkey to the skillet and cook, breaking it up with a spoon, until browned and cooked through, about 6 to 8 minutes.
Stir in the orzo pasta, chicken broth, diced tomatoes with their juice, dried oregano, dried basil, salt, and black pepper.
Bring the mixture to a boil, then reduce heat to low and cover the skillet.
Simmer for 12 to 15 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
Stir in the chopped fresh spinach and cook for an additional 2 minutes until wilted.
Remove from heat and stir in the grated Parmesan cheese and chopped fresh parsley.
Serve the turkey orzo dinner warm.
