A hearty and comforting slow cooker soup that captures all the flavors of traditional stuffed cabbage without the hassle. Packed with ground beef, cabbage, tomatoes, and savory spices, this unstuffed cabbage soup is perfect for an easy weeknight meal.
Ingredients
1 pound ground beef
1 medium onion, diced
3 cloves garlic, minced
1 medium head green cabbage, chopped (about 6 cups)
1 (14.5 ounce) can diced tomatoes, undrained
1 (8 ounce) can tomato sauce
4 cups beef broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
2 medium carrots, peeled and sliced
2 stalks celery, sliced
Instructions
In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon as it cooks, about 6-8 minutes.
Add the diced onion and minced garlic to the skillet with the beef and cook until the onion is softened, about 3-4 minutes.
Transfer the cooked beef, onion, and garlic mixture to the slow cooker.
Add the chopped cabbage, diced tomatoes with their juice, tomato sauce, beef broth, dried oregano, dried basil, smoked paprika, salt, black pepper, crushed red pepper flakes, sliced carrots, and sliced celery to the slow cooker.
Stir all ingredients together until well combined.
Cover and cook on low for 6 hours, or until the vegetables are tender and flavors are well blended.
Taste and adjust seasoning with additional salt and pepper if desired before serving.
