Soft and sweet apple muffins perfect for kids. These muffins are moist, mildly spiced, and packed with fresh apple pieces, making a delicious and wholesome snack or breakfast treat.
Ingredients
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar, packed
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup peeled and finely chopped apple (about 1 medium apple)
1/2 cup whole milk
1/4 cup unsweetened applesauce
1 large egg
1 teaspoon vanilla extract
1/4 cup unsalted butter, melted and cooled
Instructions
Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.
Add the finely chopped apple pieces to the dry ingredients and toss to coat evenly.
In a separate medium bowl, whisk together the whole milk, unsweetened applesauce, egg, vanilla extract, and melted butter until smooth.
Pour the wet ingredients into the dry ingredients and gently fold together using a spatula until just combined. Do not overmix; some lumps are okay.
Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
Bake in the preheated oven for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and allow them to cool in the pan for 5 minutes.
Transfer the muffins to a wire rack to cool completely before serving.
