Ingredients
2 pounds beef chuck roast, trimmed and cut into 2-inch pieces
1 packet (1 ounce) ranch dressing mix
1 cup beef broth
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 cup chopped fresh parsley
Instructions
In a small bowl, combine the ranch dressing mix, garlic powder, onion powder, black pepper, and salt.
Rub the spice mixture evenly over the beef chuck roast pieces.
Heat the olive oil in a large skillet over medium-high heat.
Sear the beef pieces in the skillet for 2-3 minutes on each side until browned.
Transfer the seared beef pieces to the crock pot.
Pour the beef broth over the beef in the crock pot.
Cover and cook on low for 6 hours or until the beef is tender and easily shredded.
Once cooked, sprinkle the chopped fresh parsley over the beef before serving.
