Tender and flavorful beef tips slow-cooked with rosemary, garlic, and savory seasonings, perfect for a comforting meal served over mashed potatoes or egg noodles.
Ingredients
2 pounds Trader Joe’s beef tips, trimmed of excess fat
1 tablespoon olive oil
1 medium onion, diced
3 cloves garlic, minced
1 cup beef broth
1/2 cup dry red wine
2 teaspoons dried rosemary
1 teaspoon dried thyme
1/2 teaspoon black pepper
1 teaspoon salt
2 tablespoons cornstarch
2 tablespoons cold water
Instructions
Heat olive oil in a large skillet over medium-high heat.
Add beef tips to the skillet and brown on all sides, about 3-4 minutes per batch. Transfer browned beef tips to the slow cooker.
In the same skillet, add diced onion and sauté for 3-4 minutes until softened.
Add minced garlic to the skillet and cook for 1 minute until fragrant.
Pour in beef broth and red wine, scraping up any browned bits from the bottom of the skillet.
Stir in dried rosemary, dried thyme, salt, and black pepper.
Pour the mixture over the beef tips in the slow cooker.
Cover and cook on low for 6 hours until beef is tender.
About 15 minutes before serving, mix cornstarch and cold water in a small bowl until smooth.
Stir the cornstarch slurry into the slow cooker to thicken the sauce.
Cover and cook on high for an additional 15 minutes until sauce thickens.
Serve hot over mashed potatoes, rice, or egg noodles.
