Description

A quick and easy sheet pan shrimp boil cooked in the oven, featuring shrimp, sausage, potatoes, and corn all seasoned with classic Cajun spices for a flavorful and convenient meal.


Ingredients

1 pound large shrimp, peeled and deveined
1 pound smoked sausage, sliced into 1/2-inch pieces
1 pound baby red potatoes, halved
2 ears of corn, husked and cut into 2-inch pieces
3 tablespoons olive oil
2 tablespoons Cajun seasoning
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lemon, sliced into rounds
2 tablespoons unsalted butter, melted
2 tablespoons chopped fresh parsley


Instructions

Preheat the oven to 425°F (220°C).
In a large bowl, combine the baby red potatoes with 1 tablespoon of olive oil, 1 tablespoon of Cajun seasoning, 1/2 teaspoon garlic powder, and 1/4 teaspoon salt. Toss well to coat.
Spread the potatoes evenly on a large rimmed baking sheet and roast in the oven for 15 minutes.
Meanwhile, in the same bowl, combine the shrimp, sliced sausage, corn pieces, remaining 2 tablespoons olive oil, 1 tablespoon Cajun seasoning, 1/2 teaspoon garlic powder, 1 teaspoon smoked paprika, and 1/4 teaspoon black pepper. Toss to coat all ingredients evenly.
Remove the baking sheet from the oven after 15 minutes and add the shrimp, sausage, and corn mixture on top of the partially cooked potatoes.
Arrange lemon slices evenly over the sheet pan.
Return the baking sheet to the oven and roast for an additional 10 minutes, or until the shrimp are pink and opaque and the potatoes are tender.
Remove the sheet pan from the oven and drizzle the melted butter over the shrimp boil.
Sprinkle chopped fresh parsley over the top before serving.
