A quick and healthy recipe featuring perfectly cooked shrimp and tender asparagus, seasoned with garlic and lemon, all made effortlessly in the air fryer.
Ingredients
12 ounces large shrimp, peeled and deveined
1 bunch asparagus (about 12 ounces), trimmed and cut into 2-inch pieces
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon lemon zest
1 tablespoon fresh lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon smoked paprika
1 tablespoon chopped fresh parsley
Instructions
Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a large bowl, combine the shrimp, asparagus pieces, olive oil, minced garlic, lemon zest, lemon juice, kosher salt, black pepper, and smoked paprika. Toss well to coat evenly.
Place the shrimp and asparagus mixture in the air fryer basket in a single layer. You may need to cook in two batches to avoid overcrowding.
Cook for 8 minutes, shaking the basket halfway through cooking to ensure even crisping.
Carefully remove the shrimp and asparagus from the air fryer and transfer to a serving dish.
Sprinkle chopped fresh parsley over the top and serve immediately.
