Description

A comforting and hearty slow cooker soup featuring tender vegetables, savory broth, and perfectly cooked pasta. This easy recipe is perfect for a cozy meal with minimal prep.


Ingredients

1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
3 medium carrots, peeled and sliced
2 celery stalks, sliced
1 (14.5 ounces) can diced tomatoes, undrained
6 cups low-sodium chicken broth
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup dried small pasta (such as ditalini or small shells)
2 cups fresh spinach, chopped


Instructions

Heat olive oil in a skillet over medium heat. Add diced onion and cook for 3-4 minutes until softened.
Add minced garlic to the skillet and cook for 1 minute until fragrant. Remove from heat.
In the slow cooker, combine cooked onion and garlic, sliced carrots, celery, diced tomatoes with juice, chicken broth, dried basil, dried oregano, dried thyme, salt, and black pepper. Stir well.
Cover and cook on low for 4 hours until vegetables are tender.
About 30 minutes before serving, stir in the dried pasta and chopped spinach. Cover and continue cooking on low until pasta is tender, about 25-30 minutes.
Stir the soup well before serving. Adjust seasoning with additional salt and pepper if needed.
