Description

Ingredients

2 cups diced carrots
2 cups diced celery
1 cup diced yellow onion
3 cloves garlic, minced
2 cups diced potatoes
1 cup chopped green beans
1 cup chopped zucchini
1 cup chopped tomatoes
1 cup frozen corn kernels
1 cup frozen peas
6 cups vegetable broth
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon ground black pepper
1 teaspoon salt
2 tablespoons olive oil
1/4 cup chopped fresh parsley


Instructions

Add diced carrots, celery, yellow onion, minced garlic, diced potatoes, green beans, zucchini, chopped tomatoes, frozen corn, and frozen peas to the slow cooker.
Pour in the vegetable broth over the vegetables.
Add dried thyme, dried basil, dried oregano, ground black pepper, and salt to the slow cooker.
Drizzle olive oil over the ingredients in the slow cooker.
