Description

A hearty and comforting slow cooker dinner featuring ground beef, potatoes, carrots, and onions simmered in a savory tomato-based sauce. Perfect for an easy weeknight meal with minimal prep.


Ingredients

1 pound ground beef
4 medium red potatoes, peeled and cut into 1-inch chunks
4 medium carrots, peeled and sliced into 1/2-inch pieces
1 medium yellow onion, chopped
2 cloves garlic, minced
1 can (15 ounces) tomato sauce
1 cup beef broth
2 tablespoons Worcestershire sauce
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons all-purpose flour
2 tablespoons cold water
2 tablespoons chopped fresh parsley (for garnish)


Instructions

In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon as it cooks, about 5-7 minutes. Drain excess fat.
Transfer the browned ground beef to the slow cooker.
Add the peeled and chopped potatoes, sliced carrots, chopped onion, and minced garlic to the slow cooker.
In a medium bowl, whisk together the tomato sauce, beef broth, Worcestershire sauce, dried Italian seasoning, salt, and black pepper.
Pour the tomato sauce mixture evenly over the ingredients in the slow cooker.
Cover and cook on low for 6 hours, or until the vegetables are tender.
About 15 minutes before serving, mix the all-purpose flour and cold water in a small bowl until smooth to create a slurry.
Stir the flour slurry into the slow cooker to thicken the sauce. Cover and cook on high for an additional 15 minutes.
Taste and adjust seasoning if needed.
Serve hot, garnished with chopped fresh parsley.
