Description

A quick and flavorful ground turkey skillet dinner packed with vegetables and savory spices, perfect for a healthy weeknight meal.


Ingredients

1 tablespoon olive oil
1 pound ground turkey
1 medium yellow onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 cup mushrooms, sliced
1 medium zucchini, diced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
Salt, to taste
Black pepper, to taste
1 cup canned diced tomatoes, drained
1/4 cup chopped fresh parsley


Instructions

Heat olive oil in a large skillet over medium heat.
Add diced onion and cook for 3 minutes until softened.
Add minced garlic and cook for 30 seconds until fragrant.
Add ground turkey to the skillet and cook, breaking it up with a spoon, until no longer pink, about 5-7 minutes.
Stir in diced red bell pepper, sliced mushrooms, and diced zucchini. Cook for 5 minutes until vegetables are tender.
Add ground cumin, smoked paprika, dried oregano, crushed red pepper flakes, salt, and black pepper. Stir to combine.
Add drained diced tomatoes and cook for another 3 minutes, stirring occasionally.
Remove skillet from heat and stir in chopped fresh parsley.
Serve warm as a standalone dish or with rice or quinoa.
