Description

A quick and easy one pot creamy mushroom pasta that’s perfect for a comforting weeknight dinner. Tender pasta cooked in a savory mushroom sauce with garlic, onions, and a touch of cream, all made in one pot for minimal cleanup.


Ingredients

2 tablespoons olive oil
1 medium yellow onion, finely chopped
3 cloves garlic, minced
12 ounces cremini mushrooms, sliced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
8 ounces uncooked penne pasta
3 1/2 cups vegetable broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley


Instructions

Heat olive oil in a large pot over medium heat.
Add the chopped onion and cook until softened, about 3 minutes.
Add the minced garlic and sliced mushrooms to the pot and cook until the mushrooms release their moisture and begin to brown, about 5 minutes.
Stir in dried thyme, salt, and black pepper.
Add the uncooked penne pasta and vegetable broth to the pot and stir to combine.
Bring the mixture to a boil, then reduce heat to medium-low and simmer uncovered, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed, about 12-15 minutes.
Stir in the heavy cream and grated Parmesan cheese until the sauce is creamy and well combined.
Cook for an additional 2 minutes, stirring frequently, until heated through.
Remove from heat and sprinkle with chopped fresh parsley before serving.
