A healthy and low-calorie meal featuring grilled chicken breast paired with steamed broccoli and carrots. Perfect for a nutritious lunch or dinner that is light yet satisfying.
Ingredients
2 boneless skinless chicken breasts (about 6 ounces each)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 head of broccoli, cut into florets
2 medium carrots, peeled and sliced
1/2 teaspoon salt for vegetables
1/4 teaspoon black pepper for vegetables
1 lemon, cut into wedges
Instructions
Preheat the grill or grill pan to medium-high heat.
In a small bowl, combine olive oil, garlic powder, paprika, salt, and black pepper.
Brush the chicken breasts evenly with the olive oil mixture on both sides.
Place the chicken breasts on the grill and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (74°C).
While the chicken is grilling, bring a pot of water to a boil and place a steamer basket over it.
Add the broccoli florets and sliced carrots to the steamer basket, cover, and steam for 5-7 minutes until vegetables are tender but still crisp.
Remove the vegetables from the steamer and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Toss gently to combine.
Once the chicken is cooked, remove it from the grill and let it rest for 3 minutes.
Serve the grilled chicken breasts with steamed broccoli and carrots on the side.
Garnish with lemon wedges to squeeze over the chicken and vegetables before eating.
