Description
A healthy and flavorful low calorie chicken dinner featuring grilled chicken breast with steamed vegetables and a light lemon herb sauce.
Ingredients
4 boneless skinless chicken breasts (about 6 ounces each)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 medium lemon, juiced
1 tablespoon fresh parsley, finely chopped
1 cup broccoli florets
1 cup carrot slices
1 cup green beans, trimmed
1/4 cup low sodium chicken broth
Instructions
Preheat grill or grill pan over medium-high heat.
In a small bowl, mix olive oil, garlic powder, dried oregano, salt, and black pepper.
Brush the chicken breasts evenly with the olive oil mixture on both sides.
Place chicken breasts on the grill and cook for 6-7 minutes per side or until internal temperature reaches 165°F (74°C). Remove from grill and let rest.
While the chicken is grilling, steam broccoli florets, carrot slices, and green beans in a steamer basket over boiling water for 5-7 minutes until tender but still crisp.
In a small saucepan, combine lemon juice, chopped parsley, and chicken broth. Heat over medium heat for 2-3 minutes until warmed through.
Serve each grilled chicken breast with a portion of steamed vegetables and drizzle the lemon herb sauce over the chicken.
