Description

A simple and flavorful lemon pepper salmon recipe that is quick to prepare and perfect for a healthy weeknight dinner. The salmon is seasoned with lemon zest, black pepper, and garlic, then baked to tender perfection.


Ingredients

4 salmon fillets, skin on, about 6 ounces each
1 tablespoon olive oil
1 teaspoon lemon zest, finely grated
1 teaspoon freshly ground black pepper
1/2 teaspoon kosher salt
1/2 teaspoon garlic powder
1 lemon, thinly sliced
1 tablespoon fresh lemon juice


Instructions

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Pat the salmon fillets dry with paper towels and place them skin-side down on the prepared baking sheet.
In a small bowl, combine the olive oil, lemon zest, black pepper, kosher salt, and garlic powder. Stir well to make a seasoning mixture.
Brush the seasoning mixture evenly over the top of each salmon fillet.
Place 2 lemon slices on top of each fillet.
Bake the salmon in the preheated oven for 12 to 15 minutes, or until the salmon flakes easily with a fork and is cooked through.
Remove the salmon from the oven and drizzle fresh lemon juice over each fillet.
Serve immediately, garnished with additional lemon slices if desired.
