A healthy and high-protein chicken salad made with shredded chicken breast and creamy Greek yogurt dressing, perfect for a nutritious lunch or light dinner.
Ingredients
2 cups cooked chicken breast, shredded
1 cup plain Greek yogurt (non-fat or low-fat)
1/2 cup celery, finely chopped
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1 tablespoon Dijon mustard
1 tablespoon lemon juice, freshly squeezed
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup sliced almonds (optional for crunch)
Instructions
In a large mixing bowl, combine the shredded cooked chicken breast, finely chopped celery, red onion, and fresh parsley.
In a separate small bowl, whisk together the Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and black pepper until smooth and well combined.
Pour the Greek yogurt dressing over the chicken mixture.
Gently fold the dressing into the chicken mixture until all ingredients are evenly coated.
If using, stir in the sliced almonds for added texture and crunch.
Cover the bowl and refrigerate the chicken salad for at least 10 minutes before serving to allow flavors to meld.
Serve chilled on its own, over a bed of greens, or as a filling for sandwiches or wraps.
