Ingredients
2 medium cucumbers, peeled and diced
2 medium tomatoes, diced
1/2 medium red onion, thinly sliced
1/2 cup crumbled feta cheese
1/4 cup pitted kalamata olives, halved
1/4 cup fresh parsley, chopped
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Instructions
In a large mixing bowl, combine the diced cucumbers, diced tomatoes, and thinly sliced red onion.
Add the crumbled feta cheese, halved kalamata olives, and chopped fresh parsley to the bowl.
In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, dried oregano, salt, and freshly ground black pepper until well combined.
Pour the dressing over the salad ingredients in the large bowl.
Gently toss all ingredients together until evenly coated with the dressing.
Taste and adjust seasoning if needed.
Refrigerate the salad for 10 minutes before serving to allow flavors to meld, or serve immediately.
