A simple and flavorful slow cooker pot roast recipe using three seasoning packets for an easy and delicious meal. Tender beef roast cooked with vegetables and a rich gravy, perfect for a comforting dinner.
Ingredients
3 pounds beef chuck roast
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 cup beef broth
1 packet onion soup mix (about 1 ounce)
1 packet au jus gravy mix (about 1 ounce)
1 packet Italian dressing mix (about 1 ounce)
4 medium carrots, peeled and cut into 2-inch pieces
3 medium potatoes, peeled and cut into chunks
1 medium onion, sliced
2 cloves garlic, minced
Instructions
Pat the beef chuck roast dry with paper towels. Season both sides with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat. Sear the roast for 3-4 minutes on each side until browned. Remove from heat.
Place the sliced onion, carrots, potatoes, and minced garlic in the bottom of the slow cooker.
Put the seared roast on top of the vegetables in the slow cooker.
In a small bowl, mix together the beef broth, onion soup mix, au jus gravy mix, and Italian dressing mix until well combined.
Pour the seasoning mixture evenly over the roast and vegetables.
Cover the slow cooker and cook on low for 8 hours, or until the beef is tender and easily shredded with a fork.
Once cooked, remove the roast and vegetables from the slow cooker. Let the roast rest for 10 minutes before slicing or shredding.
Serve the pot roast with the cooked vegetables and spoon some of the cooking juices over the top as gravy.
