Description

A quick and easy air fryer potato hash made with crispy diced potatoes, bell peppers, onions, and savory seasonings. Perfect for breakfast or a hearty side dish.

Ingredients

4 medium russet potatoes, peeled and diced into 1/2-inch cubes
1 medium red bell pepper, diced
1 medium green bell pepper, diced
1 medium yellow onion, diced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley

Instructions

Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a large bowl, combine the diced potatoes, red bell pepper, green bell pepper, and yellow onion.
Drizzle the olive oil over the vegetables and toss to coat evenly.
Add the garlic powder, smoked paprika, dried thyme, salt, and black pepper to the bowl. Toss again until all ingredients are well mixed and coated with the seasonings.
Place the seasoned vegetable mixture in the air fryer basket in a single layer. Cook for 10 minutes.
