1 pound salmon fillet, skin removed, cut into 1-inch cubes
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs
1 tablespoon water
1 cup panko breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
Cooking spray
Instructions
Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a shallow bowl, combine the all-purpose flour, salt, and black pepper.
In a second shallow bowl, whisk together the eggs and water until well combined.
In a third shallow bowl, mix the panko breadcrumbs, garlic powder, smoked paprika, and cayenne pepper.
Dip each salmon cube first into the flour mixture, shaking off any excess.
Then dip the floured salmon cube into the egg mixture, allowing excess to drip off.
Finally, coat the salmon cube evenly with the breadcrumb mixture, pressing gently to adhere.
Place the breaded salmon nuggets in a single layer in the air fryer basket. Lightly spray the nuggets with cooking spray to help them crisp up.
Cook the salmon nuggets in the air fryer at 400°F (200°C) for 10 to 12 minutes, flipping halfway through, until golden brown and cooked through.
Remove the nuggets from the air fryer and let them rest for 2 minutes before serving.
