Description

A simple and healthy one-pan meal featuring perfectly roasted salmon fillets and tender broccoli florets, seasoned with garlic and lemon for a delicious weeknight dinner.


Ingredients

4 salmon fillets, skin on, about 6 ounces each
1 pound broccoli florets, washed and dried
3 tablespoons olive oil
3 cloves garlic, minced
1 lemon, zested and juiced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon smoked paprika


Instructions

Preheat the oven to 425°F (220°C).
Line a large sheet pan with parchment paper or lightly grease it with 1 tablespoon olive oil.
In a large bowl, combine broccoli florets, 2 tablespoons olive oil, minced garlic, half of the lemon zest, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. Toss until the broccoli is evenly coated.
Spread the broccoli in a single layer on one side of the prepared sheet pan.
Place the salmon fillets on the other side of the sheet pan, skin side down.
Brush the salmon fillets with the remaining 1 tablespoon olive oil. Sprinkle the salmon evenly with the remaining lemon zest, smoked paprika, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper.
Place the sheet pan in the preheated oven and roast for 15 to 20 minutes, or until the salmon flakes easily with a fork and the broccoli is tender and slightly caramelized.
Remove the sheet pan from the oven and drizzle the salmon and broccoli with the lemon juice.
Serve immediately, dividing the salmon fillets and broccoli evenly among four plates.
