Ingredients
2 tablespoons almond flour
1 tablespoon coconut flour
1/4 teaspoon baking powder
1 tablespoon erythritol sweetener
1 large egg
1 tablespoon mashed ripe banana
1 tablespoon unsweetened almond milk
1/2 teaspoon vanilla extract
1 tablespoon chopped walnuts
1 tablespoon melted butter
Instructions
In a microwave-safe mug, combine 2 tablespoons almond flour, 1 tablespoon coconut flour, 1/4 teaspoon baking powder, and 1 tablespoon erythritol sweetener. Stir well to mix the dry ingredients.
Add 1 large egg, 1 tablespoon mashed ripe banana, 1 tablespoon unsweetened almond milk, and 1/2 teaspoon vanilla extract to the dry ingredients in the mug. Mix thoroughly until a smooth batter forms.
Stir in 1 tablespoon melted butter until fully incorporated.
Fold in 1 tablespoon chopped walnuts gently into the batter.
Microwave the mug on high for 90 to 120 seconds, or until the cake has risen and is set in the middle. Cooking time may vary depending on your microwave.
