A warm and comforting banana bread baked oatmeal that’s perfect for breakfast or brunch. This recipe combines ripe bananas, oats, and classic banana bread flavors into a wholesome baked dish.
Ingredients
2 large ripe bananas, mashed
2 cups old-fashioned rolled oats
1/4 cup brown sugar, packed
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup milk (dairy or plant-based)
1 large egg
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1/4 cup chopped walnuts (optional)
Instructions
Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
In a large mixing bowl, combine the rolled oats, brown sugar, baking powder, ground cinnamon, and salt. Stir until well mixed.
In a separate bowl, whisk together the mashed bananas, milk, egg, melted butter, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir until fully combined.
If using, fold in the chopped walnuts evenly into the mixture.
Transfer the mixture into the prepared baking dish and spread it out evenly.
Bake in the preheated oven for 30 to 35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Remove from the oven and let cool for 5 minutes before serving.
