Description

A simple and delicious one-pan meal featuring savory sausage, crispy roasted potatoes, and tender carrots. Perfect for an easy weeknight dinner with minimal cleanup.


Ingredients

1 pound smoked sausage, sliced into 1/2-inch thick rounds
1 pound baby potatoes, halved
4 large carrots, peeled and cut into 1/2-inch thick sticks
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper


Instructions

Preheat the oven to 425°F (220°C).
In a large mixing bowl, combine the halved baby potatoes and carrot sticks.
Add the olive oil, garlic powder, dried thyme, dried rosemary, smoked paprika, salt, and black pepper to the bowl. Toss well to evenly coat the vegetables with the oil and seasonings.
Arrange the seasoned potatoes and carrots in a single layer on a large sheet pan.
Place the sliced smoked sausage evenly over the vegetables on the sheet pan.
Roast in the preheated oven for 30 to 35 minutes, stirring once halfway through, until the potatoes are golden and tender and the sausage is browned.
Remove from the oven and let cool for 5 minutes before serving.
