Description

A warm and comforting breakfast bowl that tastes like apple cake, made with oats, fresh apples, cinnamon, and a touch of maple syrup.


Ingredients

1 cup rolled oats
2 cups water
1 medium apple, peeled, cored, and diced
1 teaspoon ground cinnamon
2 tablespoons maple syrup
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 teaspoon vanilla extract
2 tablespoons chopped walnuts


Instructions

In a medium saucepan, bring 2 cups of water to a boil.
Add 1 cup of rolled oats, reduce heat to medium-low, and simmer for 5 minutes, stirring occasionally.
Add the diced apple, 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, and 1/4 teaspoon salt to the oats.
Continue to cook for another 5 minutes, stirring occasionally, until the oats are soft and the apples are tender.
Remove the saucepan from heat and stir in 2 tablespoons maple syrup and 1/2 teaspoon vanilla extract.
Divide the apple cake oats into two bowls and top each with 1 tablespoon chopped walnuts.
Serve warm.
