Description

A delicious and comforting chicken rice pineapple casserole combining tender chicken, fluffy rice, sweet pineapple, and a creamy sauce baked to golden perfection.


Ingredients

2 cups cooked white rice
2 cups cooked chicken breast, shredded
1 cup pineapple chunks, drained
1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup mayonnaise
1/4 cup chopped green bell pepper
1/4 cup chopped onion
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1 tablespoon olive oil


Instructions

Preheat the oven to 350°F (175°C).
Heat olive oil in a skillet over medium heat. Add chopped onion and green bell pepper and sauté for 4-5 minutes until softened.
In a large mixing bowl, combine cooked rice, shredded chicken, pineapple chunks, sautéed onion and bell pepper, sour cream, mayonnaise, garlic powder, salt, black pepper, and paprika. Mix well.
Transfer the mixture into a greased 9×13 inch casserole dish and spread evenly.
Sprinkle shredded cheddar cheese evenly over the top.
Bake in the preheated oven for 35-40 minutes until the casserole is heated through and the cheese is melted and bubbly.
Remove from the oven and let it rest for 5 minutes before serving.
