Description

A hearty and delicious Tater Tot Breakfast Bowl featuring crispy tater tots, scrambled eggs, savory sausage, melted cheddar cheese, and fresh green onions. Perfect for a satisfying breakfast or brunch.


Ingredients

32 ounces frozen tater tots
8 large eggs
1/4 cup whole milk
1/2 teaspoon salt
1/4 teaspoon black pepper
12 ounces breakfast sausage, casing removed
1 cup shredded sharp cheddar cheese
3 green onions, thinly sliced
2 tablespoons unsalted butter


Instructions

Preheat the oven to 425°F (220°C).
Spread the frozen tater tots evenly on a large baking sheet in a single layer.
Bake the tater tots in the preheated oven for 20 minutes, turning them halfway through, until golden brown and crispy.
While the tater tots bake, heat a large skillet over medium heat and add the breakfast sausage.
Cook the sausage, breaking it apart with a spatula, until browned and cooked through, about 7-8 minutes. Remove from the skillet and set aside.
In a medium bowl, whisk together the eggs, whole milk, salt, and black pepper until well combined.
In the same skillet, melt the butter over medium-low heat.
Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are softly scrambled and just set, about 3-4 minutes. Remove from heat.
Divide the crispy tater tots evenly among four bowls.
Top each bowl with equal portions of scrambled eggs and cooked sausage.
Sprinkle shredded cheddar cheese over each bowl so it begins to melt.
Garnish with sliced green onions.
Serve immediately while warm.
