Description

A simple and flavorful Whole30-compliant slow cooker chicken recipe, perfect for an easy and healthy meal. Tender chicken cooked with fresh vegetables and herbs, free from added sugars and non-compliant ingredients.


Ingredients

4 boneless, skinless chicken breasts
2 medium carrots, peeled and sliced into 1/2 inch pieces
2 celery stalks, sliced into 1/2 inch pieces
1 medium yellow onion, sliced
4 cloves garlic, minced
1 cup chicken broth (Whole30 compliant, no added sugar)
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 teaspoon black pepper
2 tablespoons avocado oil
1 lemon, thinly sliced
2 tablespoons fresh parsley, chopped


Instructions

Place the sliced carrots, celery, and onion evenly in the bottom of the slow cooker.
In a small bowl, mix the dried thyme, dried oregano, sea salt, and black pepper.
Rub the chicken breasts with avocado oil, then sprinkle the seasoning mixture evenly over both sides of each chicken breast.
Place the seasoned chicken breasts on top of the vegetables in the slow cooker.
Add the minced garlic and lemon slices over the chicken.
Pour the chicken broth into the slow cooker around the chicken and vegetables, avoiding pouring directly on the chicken to keep the seasoning in place.
Cover the slow cooker with the lid and cook on low for 6 hours, or until the chicken is cooked through and tender.
Once cooked, remove the chicken and vegetables from the slow cooker and place on a serving platter.
Sprinkle fresh chopped parsley over the chicken and vegetables before serving.
