Description

A simple and flavorful slow cooker recipe featuring tender chicken breasts cooked with fresh zucchini and savory seasonings. Perfect for an easy, healthy weeknight dinner.


Ingredients

4 boneless, skinless chicken breasts
2 medium zucchinis, sliced into 1/2-inch rounds
1 medium yellow onion, thinly sliced
3 cloves garlic, minced
1 cup low sodium chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1/2 teaspoon crushed red pepper flakes


Instructions

Lightly grease the slow cooker insert with 1 tablespoon of olive oil.
Place the chicken breasts in the bottom of the slow cooker in a single layer.
In a medium bowl, combine the sliced zucchini, sliced onion, and minced garlic.
Add the dried oregano, dried basil, salt, black pepper, and crushed red pepper flakes to the vegetable mixture and toss to coat evenly.
Spread the seasoned vegetables evenly over and around the chicken breasts in the slow cooker.
Pour the chicken broth over the chicken and vegetables.
Drizzle the remaining 1 tablespoon of olive oil over the top.
Cover the slow cooker with its lid and cook on LOW for 4 to 4 1/2 hours, or until the chicken is cooked through and the zucchini is tender.
Carefully remove the chicken and vegetables from the slow cooker and serve warm.
