Description

A simple and comforting slow cooker chicken in broth recipe. Tender chicken cooked slowly in a flavorful broth, perfect for an easy meal or base for soups and stews.


Ingredients

4 bone-in, skin-on chicken thighs
4 cups low-sodium chicken broth
1 medium yellow onion, peeled and quartered
3 cloves garlic, peeled and smashed
2 medium carrots, peeled and cut into 1-inch pieces
2 celery stalks, cut into 1-inch pieces
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 bay leaf


Instructions

Place the chicken thighs in the bottom of the slow cooker.
Add the quartered onion, smashed garlic cloves, carrot pieces, and celery pieces around and on top of the chicken.
Pour the chicken broth over the chicken and vegetables.
Sprinkle the kosher salt, black pepper, and dried thyme evenly over the contents in the slow cooker.
Add the bay leaf to the slow cooker.
Cover and cook on low for 6 hours, or until the chicken is cooked through and tender.
Remove the chicken thighs from the slow cooker and set aside.
Discard the bay leaf and optionally strain the broth if desired.
Serve the chicken with some of the broth and vegetables, or use the broth as a base for soups or other recipes.
