Ingredients

1 package (18.5 ounces) peanut butter cookie mix
1 large egg
1/3 cup vegetable oil
1/4 cup smooth peanut butter
1/4 cup chopped roasted peanuts
2 tablespoons brown sugar
1/4 teaspoon vanilla extract
1/4 cup mini chocolate chips


Instructions

Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large mixing bowl, combine the peanut butter cookie mix, egg, and vegetable oil. Stir until a dough forms.
Add the smooth peanut butter, chopped roasted peanuts, brown sugar, and vanilla extract to the dough. Mix thoroughly until all ingredients are evenly incorporated.
Fold in the mini chocolate chips gently to distribute them throughout the dough.
Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Press each cookie slightly with the back of a fork to create a crisscross pattern on top.
Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden.
Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
