Ingredients
12 ounces uncooked penne pasta
1 tablespoon olive oil
1 medium yellow onion, finely chopped
3 cloves garlic, minced
4 cups low sodium chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
Instructions
Heat olive oil in a large pot over medium heat.
Add the chopped onion and sauté for 3-4 minutes until translucent.
Add the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and bring to a boil.
Add the uncooked penne pasta to the boiling broth and stir to prevent sticking.
Reduce heat to medium-low and simmer uncovered, stirring occasionally, for 12-15 minutes until pasta is al dente and most of the liquid is absorbed.
Stir in the heavy cream, grated Parmesan cheese, salt, black pepper, and crushed red pepper flakes.
Cook for an additional 2-3 minutes, stirring frequently, until the sauce is creamy and coats the pasta evenly.
Remove from heat and let sit for 2 minutes before serving.
