Ingredients
1 cup old-fashioned rolled oats
1/2 cup natural creamy peanut butter
1/4 cup honey
1/4 cup ground flaxseed
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Instructions
In a large mixing bowl, combine the rolled oats, ground flaxseed, ground cinnamon, and salt.
Add the peanut butter, honey, and vanilla extract to the dry ingredients.
Mix all ingredients thoroughly until a sticky dough forms.
Using your hands or a small cookie scoop, form the mixture into 12 evenly sized bite-sized balls.
Place the energy bites on a parchment-lined tray or plate.
Refrigerate the energy bites for at least 30 minutes to firm up before serving.
