A delicious and easy-to-make Lemon Herb Butter Salmon paired with tender roasted asparagus. This recipe features a flavorful lemon herb butter sauce that perfectly complements the rich salmon and crisp asparagus, making it a perfect healthy weeknight dinner.
Ingredients
4 salmon fillets, skin on, about 6 ounces each
1 pound fresh asparagus, trimmed
4 tablespoons unsalted butter, softened
2 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh dill, finely chopped
1 tablespoon olive oil
Salt, to taste
Black pepper, to taste
Lemon wedges, for serving
Instructions
Preheat the oven to 400°F (200°C).
In a small bowl, combine the softened butter, minced garlic, lemon juice, lemon zest, chopped parsley, and chopped dill. Mix well and set aside.
Place the trimmed asparagus on a baking sheet. Drizzle with olive oil and season with salt and black pepper. Toss to coat evenly and spread in a single layer.
Place the salmon fillets skin-side down on the baking sheet next to the asparagus. Season the salmon with salt and black pepper.
Spread about 1 tablespoon of the lemon herb butter evenly over the top of each salmon fillet.
Bake in the preheated oven for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender-crisp.
Remove from the oven and let rest for 2 minutes.
Serve the salmon and asparagus with additional lemon wedges on the side.
