Description

A nutritious and high-protein skillet dish combining lean ground beef and fresh zucchini, seasoned with garlic and herbs for a flavorful, low-carb meal.


Ingredients

1 pound lean ground beef (90% lean)
2 medium zucchinis, diced (about 3 cups)
1 medium yellow onion, finely chopped
3 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley


Instructions

Heat olive oil in a large skillet over medium-high heat.
Add the chopped onion and sauté for 3 minutes until translucent.
Add the minced garlic and cook for 1 minute until fragrant.
Add the ground beef to the skillet and cook, breaking it apart with a spatula, until browned and cooked through, about 6-7 minutes.
Drain any excess fat from the skillet.
Add the diced zucchini, dried oregano, black pepper, salt, and crushed red pepper flakes to the skillet.
Cook for 5 minutes, stirring occasionally, until the zucchini is tender but still slightly crisp.
Remove the skillet from heat and stir in the grated Parmesan cheese and chopped fresh parsley.
Serve hot, dividing evenly among four plates.
