A comforting and nutritious Hearty Chicken Vegetable Soup packed with tender chicken, fresh vegetables, and flavorful herbs. Perfect for a cozy meal any day of the week.
Ingredients
2 tablespoons olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
3 medium carrots, peeled and sliced
2 celery stalks, sliced
1 medium potato, peeled and diced
1 medium zucchini, diced
1 cup green beans, trimmed and cut into 1-inch pieces
8 cups low-sodium chicken broth
2 cups cooked chicken breast, shredded
1 teaspoon dried thyme
1 teaspoon dried parsley
1/2 teaspoon dried rosemary
1/2 teaspoon ground black pepper
1 teaspoon salt
1 bay leaf
1/4 cup fresh parsley, chopped
Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion and cook for 3-4 minutes until translucent.
Add minced garlic and cook for 1 minute until fragrant.
Add sliced carrots, celery, and diced potato. Cook for 5 minutes, stirring occasionally.
Pour in the chicken broth and bring to a boil.
Add zucchini, green beans, shredded chicken, dried thyme, dried parsley, dried rosemary, black pepper, salt, and bay leaf.
Reduce heat to low and simmer uncovered for 30 minutes, stirring occasionally, until vegetables are tender.
Remove the bay leaf and discard.
Stir in fresh chopped parsley.
Taste and adjust seasoning if needed.
Serve hot.
