Description

A flavorful and hearty chicken casserole featuring tender chicken pieces simmered with sweet dates and aromatic spices, perfect for a comforting family meal.


Ingredients

2 tablespoons olive oil
1 large onion, finely chopped
3 garlic cloves, minced
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/4 teaspoon ground black pepper
1/2 teaspoon salt
1 1/2 pounds boneless, skinless chicken thighs, cut into 2-inch pieces
1 1/2 cups chicken broth
1 cup pitted dates, chopped
1/2 cup sliced almonds
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh parsley
1 tablespoon lemon juice


Instructions

Preheat the oven to 350°F (175°C).
Heat the olive oil in a large ovenproof skillet or casserole dish over medium heat.
Add the chopped onion and cook for 5 minutes until softened.
Add the minced garlic, ground cinnamon, ground cumin, ground turmeric, black pepper, and salt. Stir and cook for 1 minute until fragrant.
Add the chicken pieces to the skillet and brown them on all sides for about 5 minutes.
Pour in the chicken broth and bring to a simmer.
Stir in the chopped dates and sliced almonds.
Cover the skillet or casserole dish with a lid or aluminum foil and transfer to the preheated oven.
Bake for 35 minutes, or until the chicken is cooked through and tender.
Remove the casserole from the oven and stir in the chopped cilantro, parsley, and lemon juice.
Serve hot, garnished with additional fresh herbs if desired.
