Description

A flavorful Cajun spiced baked turkey breast paired with roasted vegetables, perfect for a hearty and healthy meal.


Ingredients

1 (3 to 4 pounds) boneless turkey breast, skin on
2 tablespoons olive oil, divided
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon cayenne pepper
1 teaspoon black pepper
1 teaspoon salt
1/2 teaspoon white pepper
4 medium carrots, peeled and cut into 2-inch pieces
3 medium red potatoes, cut into 1-inch cubes
1 large red bell pepper, cut into 1-inch pieces
1 large green bell pepper, cut into 1-inch pieces
1 medium yellow onion, cut into wedges
2 cloves garlic, minced


Instructions

Preheat the oven to 375°F (190°C).
In a small bowl, combine paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, black pepper, salt, and white pepper to make the Cajun spice mix.
Pat the turkey breast dry with paper towels. Rub 1 tablespoon of olive oil evenly over the turkey breast.
Generously coat the turkey breast with the Cajun spice mix, pressing it into the skin and meat.
In a large mixing bowl, combine carrots, red potatoes, red bell pepper, green bell pepper, yellow onion, and minced garlic.
Drizzle the remaining 1 tablespoon of olive oil over the vegetables and toss to coat evenly.
Place the seasoned turkey breast in the center of a large roasting pan or baking dish.
Arrange the prepared vegetables evenly around the turkey breast in the pan.
Bake in the preheated oven for 1 hour and 15 minutes, or until the internal temperature of the turkey breast reaches 165°F (74°C) when measured with a meat thermometer.
Halfway through cooking (about 35-40 minutes in), stir the vegetables gently to ensure even roasting.
Once cooked, remove the turkey breast from the oven and let it rest for 10 minutes before slicing.
Serve the sliced Cajun baked turkey breast alongside the roasted vegetables.
