Apple Bran Muffins

Description

Delicious and wholesome apple bran muffins made with fresh apples and bran cereal. Perfect for a healthy breakfast or snack.


Ingredients

1 1/2 cups wheat bran
1 cup buttermilk
1/2 cup vegetable oil
1 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 cups peeled and finely chopped apple (about 1 medium apple)


Instructions

Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease the cups.
In a large bowl, combine the wheat bran and buttermilk. Let it sit for 10 minutes to soften the bran.
In a separate medium bowl, whisk together the vegetable oil, brown sugar, eggs, and vanilla extract until smooth.
Add the oil mixture to the bran mixture and stir to combine.
In another bowl, sift together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon.
Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
Fold in the chopped apples gently, ensuring they are evenly distributed.
Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
Bake in the preheated oven for 22 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and allow them to cool in the pan for 5 minutes.
Transfer the muffins to a wire rack to cool completely before serving.
