Description

A quick and delicious air fryer shrimp dinner featuring perfectly seasoned shrimp served with garlic butter green beans and roasted baby potatoes. Ready in under 30 minutes, this meal is perfect for a healthy weeknight dinner.


Ingredients

1 pound raw shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
12 ounces baby potatoes, halved
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
12 ounces fresh green beans, trimmed
2 tablespoons unsalted butter
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh lemon juice


Instructions

Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a medium bowl, toss the halved baby potatoes with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until evenly coated.
Place the potatoes in the air fryer basket in a single layer and cook for 10 minutes.
While the potatoes cook, in a separate bowl, combine the shrimp with 1 tablespoon olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss to coat evenly.
After the potatoes have cooked for 10 minutes, shake the basket or stir the potatoes, then add the seasoned shrimp on top of the potatoes in a single layer.
Cook for an additional 5 minutes or until the shrimp are pink and opaque and the potatoes are tender.
While the shrimp and potatoes cook, heat a medium skillet over medium heat and melt the butter.
Add the minced garlic to the melted butter and sauté for 1 minute until fragrant.
Add the trimmed green beans to the skillet, season with 1/2 teaspoon salt and 1/4 teaspoon black pepper, and sauté for 5-7 minutes until tender-crisp.
Remove the skillet from heat and stir in 1 tablespoon fresh lemon juice.
Serve the air fried shrimp and potatoes with the garlic butter green beans on the side.
