Ingredients
2 medium apples, peeled, cored, and finely chopped
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 cup unsweetened applesauce
1/4 cup plain full-fat yogurt
1/4 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
2 tablespoons honey
Instructions
Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a medium bowl, whisk together the whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
In a large bowl, beat the egg lightly. Add the vegetable oil, unsweetened applesauce, plain yogurt, honey, and vanilla extract. Mix until well combined.
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
Fold in the finely chopped apples until evenly distributed.
Pour the batter into the prepared cake pan and spread it evenly.
Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and let it cool in the pan for 10 minutes.
Transfer the cake to a wire rack and let it cool completely before serving.
